El Capricho est\u00e1 especializado en carnes vermellas, carnes de animais vellos, de m\u00e1is de dez anos, que pasaron toda a vida a traballar. Aqu\u00ed a\u00ednda se poden apreciar sabores, texturas, infiltraciones de grasa, sabores minerais na carne que est\u00e1n a desaparecer, que desapareceran en breve. Esta carne de bestas enormes, de vellas vacas e bois mirandeses, leoneses ou galegos, madura nun lento proceso de corenta ou cincuenta d\u00edas, en adegas soterradas, en escuridade, sen conxelaci\u00f3n. E as\u00ed cons\u00e9guense sabores \u00fanicos na carne. <\/p>\n<p>O seu propietario, Jos\u00e9 Gord\u00f3n, publica no semanario local, coma se fora un bando, unha detallada descrici\u00f3n de cada un dos animais que maduran na adega, e cando se abrir\u00e1n e por\u00e1n \u00e1 venda no restaurante. Son carnes \u00fanicas que xa mesmo mereceron mesmo unha galer\u00eda fotogr\u00e1fica na revista <a href=\"http:\/\/www.time.com\/time\/magazine\/article\/0,9171,1691115,00.html\">Time<\/a> (a\u00ednda que a xornalista fale de que este restaurante se atope no Basque Country, iso si que \u00e9 non cheirala). <\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.manuelgago.org\/blog\/wp-content\/uploads\/capricho_2.jpg\" alt=\"\" title=\"capricho_2\" width=\"500\" height=\"335\" class=\"alignnone size-full wp-image-4362\" srcset=\"https:\/\/www.manuelgago.org\/blog\/wp-content\/uploads\/capricho_2.jpg 500w, https:\/\/www.manuelgago.org\/blog\/wp-content\/uploads\/capricho_2-300x201.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<p>As mesas de El Capricho at\u00f3panse na adega subterr\u00e1nea, na que as cavidades permiten albergar as mesas, e as t\u00e1boas destas te\u00f1en a cor alterada por todos os braseiros quentes que os camareiros deixan durante anos para manter a carne quente. Os clientes poden escoller entre dous men\u00fas degustaci\u00f3n que combinan setas -ins\u00f3litas variedades raras de tempada-, tortillas ou revoltos, e carnes. O men\u00fa &#8220;Crisis&#8221; anda nos 20 euros, e o de degustaci\u00f3n nos 35. Tam\u00e9n se pode comer \u00e1 carta, e cando coincide cando se abre un deses animais que atopa Cord\u00f3n por eses montes do noroeste, tam\u00e9n se ofrecen \u00e1s mesas, a\u00ednda que adoitan ter prezos estratosf\u00e9ricos (50 ou 60 euros\/quilo). Unha alternativa moi interesante dentro do paramo gastron\u00f3mico que \u00e1s veces supo\u00f1en as estradas Galicia &#8211; Madrid, xa que queda na A6 na sa\u00edda 303 en La Ba\u00f1eza.
